      Smoked Beef Brisket

      The best part about this recipe is that it’s such a simple recipe newbie’s can totally follow it..
      – Surprisingly, this simple homemade Taco Seasoning perfectly blends with the tenderness of the meat.

      Mix the dry rub in advance. If you have your homemade rub to really tweak the flavor, try making a batch in advance. This will save you time in mixing the dry ingredients.

      Give it a little trim. If bought a brisket with excessive fat, you can trim that part away but I suggest leaving about ¼ inch of fat in just so it doesn’t dry out easily. The excess fat may not render at all so it just prolongs the cooking time.

      Fat side up. This is just a personal preference since I’m used to doing this. However, you can actually smoke your brisket fat side down. This is great especially when you have a lot of heat coming from below.

      Important Part…

      How long does it take to smoke a brisket?
      Because this beef cut is dense, it normally takes about 1.5 hours per pound of beef brisket at 225 F. This may vary depending on the environment, how often you open the lid, and the thickness of the meat.

      You’ll know that your beef brisket is done once it hits 195 F in internal temperature. However, I suggest removing it from heat just before it hits that temperature. The meat continuous to cook for about 10 Degrees more even after taking it out of the smoker. You don’t want to overcook your brisket right? Here’s a simple doneness guide for your beefy dish.

      There is a point where the internal temperature hits a wall, this is called “The Stall”, and trust me it’s super frustrating! At this point, I wrap my brisket in foil or butcher’s paper and place a bit of liquid inside (beer, cider, or juice). This will get the temperature rising!

      Properly rest. You’re going to want to rest it for a bit, around 20 minutes. This is to let the juices seep back into the meat so that when you finally slice it, it stays moist.

      Ingredients

      Vegetable oil, for brushing

      1 teaspoon chile powder

      ½ teaspoon cayenne powder

      8 ears of corn, husked

      Âź cup mayonnaise or unsalted butter

      ½ cup crumbled cotija cheese, Parmesan, or ricotta salata

      1 lime, cut into 8 wedges

      Special Equipment

      Pastry brush

      Preparation

      Build a medium-hot fire in a charcoal grill or heat a gas grill to high. Brush grill grate with oil. Combine chile powder and cayenne in a small bowl.

      Grill corn, turning occasionally with tongs, until cooked through and lightly charred, about 10 minutes. Remove from grill and immediately brush each ear with 1½ tsp. mayonnaise. Sprinkle each with 1 Tbsp. cheese and a pinch of chile powder mixture. Squeeze 1 lime wedge over each ear and serve.

      My favorite cookout food is cheesy bacon garlic bread, you buy a loaf of fresh baked sour dough from vons you can use French too slice in half Down the middle, in a small bowl add a cup of mayo 1/2 cup of parmigiana and a tablespoon of Italian seasoning mix well , take a cube of softened butter spread thin layer on both halves of bread , take mayo mixture and spread half on each half of bread , make homemade bacon bits , chop green onions and shred cheddar cheese cover both halves in cheese and sprinkle with bacon bits and green onions put on a baking sheet stick in oven on 450 for about 5 minutes or until cheese is melted and bubbly take out let cool and slice , I won best side dish in our hometown 4th of July cookout with this recipe and everytime my family attends a function they beg us to bring the “good bread” hope y’all enjoy it and have a great Memorial Day weekend

        Ok yea, hamburgers are fine but prepared burgers adding in taco seasoning to create a “taco Burger” or possibly adding BBQ sauce with Swiss Cheese and mushrooms take burgers to another level 👍
