      I’ve never had Cojita, is it a soft cheese? Corn on the cob is so good, never thought of cheese on it and that sounds delicious!

      Jalapeño poppers!
      Jalapeño
      Bacon
      Cream cheese
      Mozzarella
      Cranberries

      Take the seeds out of the jalapeño
      Then create your mix ( cream cheese, mozzarella and cranberries)
      Stuff the jalapeños and warp in bacon 😋
      Bake until bacon is cooked all the way through

      My favorite cookout food is definitely veggie kabobs. We put halved red potatoes, quarter corn on the cobz red onion, red pepper, zucchini and cover them with your choice of herbs/spices that have sat overnight in olive oil and then baste the veggies in that marinated olive oil and throw them on the grill. super yummy!! I can’t believe summer is over and watching my two year old grow too fast is making me wish I could bottle time up or slow it down somehow.

      My favorite is ELOTE
      It’s super easy & so flavorful , 6 ears of corn, (husks optional) I choose husks left on for a super cute handle
      6 lime wedges
      mexican crema, optional
      finely grated or crumbled cotija cheese, optional

      1. Preheat the oven to 350°F.

      2. Cut an inch off the “top” of the ear of corn (not the end with the stalk), then soak in water for at least 10 minutes.

      3. Place on a baking sheet and cook in the oven until tender.

      4. Carefully peel back husk and tie the ends together.

      5. Grill on a hot BBQ until just charred and serve with lime wedges. If desired, brush the grilled corn with mexican crema or sour cream, the roll in finely grated cotija cheese.
